Trim Healthy FAMILY Gluten-Free, Grain-Free Cake

Introducing.... A NEW way to make cake!! This recipe has no flour, no grain, no nothing bad, lol and is very low in carbs. It is easy, moist and tasty and will please the whole family - even though it's healthy! They won't even know they are eating so healthy!  And one thing that is important to those like me - it is extremely budget friendly!!

There are many variations of this going around the internet, and I have experimented with several variations myself. I will give a basic recipe here and you can feel free to experiment and tweak as you desire.  No one will guess that you made this with no flour! The secret ingredient is .... BEANS!  And *no one*  I have ever made this recipe for has been able to guess it!

BASIC RECIPE
1 1/2 cups of beans of any kind - cooked and drained (could use canned)
5 large eggs (or equivalent of egg whites, or a mixture)
1 TBSP vanilla
1/2 tsp salt
6 tbsp butter
1/2 tsp nunaturals stevia or other stevia equivalent to taste
1 tsp baking powder
1 tbsp water
BLEND all ingredients on high for a nice long time, until it is nice and creamy smooth. 
Put in greased baking dish. 
Bake at 350 for 30 minutes. It won't feel done when it is. TAKE it out after 30 minutes or it will get dry instead of moist.

This is the basic recipe, to which I have made the following variations: 


Peanut Butter Cake, by using white beans and adding sugar-free peanut butter to the batter. For the topping, I mixed cream cheese with heavy cream and stevia to taste, then sprinkled more peanuts on top.
For a Chocolate Cake version, I used black beans and added a few tablespoons of pure cacau powder, with no sugar added. Regular cocoa powder is fine, just make sure there is no extra sugar. And we topped with one with the same icing as above except instead of peanuts, we decorated with strawberries. And the sprinkles were not sugar-free, but it was my son's birthday, so.... we bent the rules a little. ;-)
Apple Cinnamon Cake - I used pinto beans for this and added a couple of TBSP of cinnamon to the batter.  Then I sliced up an apple and put that on top of the batter after putting it in the pan.  I made a crumble topping with butter and oats, little more stevia and more cinnamon. This was also delish.
You could add pumpkin puree and pumpkin pie spice for a pumpkin version, banana extract and walnuts for a banana-nut version, blueberries would be my fave if I could get them here.... the possibilities are endless!!!  HAVE FUN WITH HEALTH AND ENJOY!!!
